Hmmm,

  Unless I'm doing it wrong, It doesn't look like the anniversary ships can do the Piloting Mauevers that the previous C store, and the new c-store piloting ships can do.
(But If I remember correctly, the ferengi piloting ship couldn't either....)

You need to differentiate between Pilot ships and Ships with Pilot BOFF seating. The same goes for every other specialised Ships that have a build-in mechanic:

• Intel Ships can use the Gather Intelligence ability, have a HUD for that ability and usually bear the word Intel in their ship class name.
  
  
• Command Ships can use the Inspiration ability, have a HUD for that ability and usually bear the word Command in their ship class name.
  
  
• Pilot Ships can use the Pilot Manuevers, have a HUD for that ability and usually bear the word Pilot in their ship class name. Exception to the name rule is the Miradorn Theta Class Heavy Raider.
  
  
• Temporal Operative Ships can use the Molecular Reconstruction ability, have a HUD for that ability and usually bear the word Temporal in their ship class name. Exceptions to the name rule are the Sphere Builder Denous Dreadnought Carrier and Sphere Builder Edoulg Science Vessel.
  
  
• Miracle Worker Ships can use the Innovation Effects ability, have a HUD for that ability and usually bear the words Miracle Worker in their ship class name.
  

The Bajoran Denorius Interceptor does not have the word Pilot in its class name and it doesn't show the Pilot Maneuvers HUD. Therefore it is safe to assume that Pilot Maneuvers are not intended to be used with it. Also, I couldn't find any mentioning of the Pilot Maneuvers in the Blog.

Pilot Maneuvers
Pilot vessels [are] capable of executing Pilot Maneuvers once every few seconds. These sudden bursts of movement can be of incredible aid in moving into or out of danger, or repositioning yourself to get the best tactical position at a moment’s notice. Each of these starships can perform a sudden maneuver in each horizontal direction: Forward, Backward, Left or Right. Executing each maneuver will rapidly reposition your starship while granting very brief damage immunity, but costs all available thruster fuel which takes several seconds to recover.

Yup, can't use the maneuvers. Still a fun little ship. The Bajoran set is decent on it, the exploding shield facing is cool but can get kinda annoying, especially when fighting Borg.

Will there be a way to earn vouchers after the event is over? (my computer died on me last week and I was two days away from earning the ship.... so I'm hoping that when I a new computer next month I can complete the event)

There is!

If you right click your lobi and hit "use," it will open the lobi store. The anniversary vouchers are at the top of the first tab

However, that is usually only possible during the Event.

It's also important to note that the winter items pack is still there and it's February now!
